Lentil, Hemp and Garden Veg Salad

I love how much better I feel having a savoury breakfast. We can take note from different cultures around the world who enjoy meals consisting of lentils and rice, congee, and platters of vegetables, nuts and olives to start their day.

I make this protein packed salad several times per week for breakfast. You may think salad for breakfast is strange but I encourage you to give it a try. The lentils can be heated if you prefer a warm breakfast. You could also serve it with eggs or a tofu scramble. It’s filling, delicious and full of gut healthy goodness. Don’t just take my word for it…

1 packed cup of rocket, washed

1 tomato, quartered and sliced

1/4 red capsicum, sliced thin and then sliced into halves or thirds

1/2 cup canned lentils

1-2 tbsp hemp seeds

1/3 cucumber, quartered and sliced

1 green onion, washed and chopped

salt and pepper to taste

1/4 tsp dried dill weed

2 capfuls apple cider vinegar (acv)

1 tsp olive oil

1/4 avocado, sliced

  1. Add all veg to a mixing bowl, except avocado.
  2. Top with ACV, oil and seasoning.
  3. Toss together gently until dressing is throughout.
  4. Plate and serve with avocado slices.
