Mexican Spiced Tofu Scramble

This recipe has several spices but have no fear, it comes together quite quickly. I tend to throw together my own Mexican spice mix as store bought ones contain garlic and onion powder. We achieve the same flavour here with garlic infused olive oil and green onions.

1 brick of tofu, crumbled

1 tomato, diced small

1 tsp garlic infused olive oil

2 green onions, chopped and whites removed

1 handful of coriander, washed and chopped small

1/2 tsp ground turmeric

1/2 tsp paprika

1/4 tsp ground cumin

1/8 tsp ground coriander

1/4 tsp oregano

Salt and pepper to taste

  1. Heat oil in pan and add all ingredients.
  2. Stir and cook over a medium temperature until heated through and tomatoes have softened.
  3. Serve with a lemony avocado mash and side salad.
