Cooking needn’t be a massive undertaking. Sometimes meals thrown together from whatever’s in the fridge turn out to be the tastiest. My family and I just returned from a weekend away and knew we didn’t have much in the house to feed our kids. We stopped at the market and I quickly grabbed some fruits and veggies – basics. Upon returning I made a giant bowl of salad for us to share, noodles for the kids and for myself this quick tofu dish. The savoury sesame and warming ginger made it extra special. Comfort food that’s healthy for night’s when you just can’t be bothered.
1/3 brick firm tofu, cubed
1 tsp sesame oil
1 tsp tamari
1 green onion, chopped and whites removed
Salt and pepper to taste
- Warm oil in the pan.
- Add remaining ingredients and cook over medium-high heat until warmed through.
