Sometimes I find myself craving something sweet on my SIBO restricted diet. Often, I can remove the craving with a protein shake or some nuts and berries or a little almond butter. There are times though I just really wish I had a cookie to bite into. I’m starting to play with recipes that will kick that sweet urge to the curb. Here’s a recipe for a batch of chocolate cookies that will fit the bill. They are soft and chewy and make 9 cookies.
1 cup blanched almond flour
1 small banana, mashed (or ½ large banana)
2 tsp cacao
1/2 tsp baking powder
1/8 tsp salt
2 tbsp water
- Mix all ingredients in a bowl.
- Bake on a silpat lined cooked sheet in a preheated 350f (180c) oven for 13-15 minutes.
*Optional: I sprinkled the tops of my cookies with a little ground cardamom before baking. Option to add cinnamon, ginger or mixed spice.
