Raspberry Ginger Compote

This is so good! It takes just a few minutes to whip up and is brilliant on chia seed pudding or atop spiced almond muffins.

1 cup frozen raspberries

1 tbsp chia seeds

1/2 tsp vanilla extract

1 small knob of ginger, diced small

Water

  1. Add all ingredients to a pan and cook over medium heat for 5 minutes or until thickened.
  2. Mash the berries as you stir so it doesn’t stick to the pan.
  3. Add enough water (1-2 tbsp) so that it doesn’t stick.
