This gazpacho is delicious with a smooth and creamy texture due to the added avocado. A traditional recipe made SIBO friendly, your gut will love you for it. Serves 6 people as a side or 4 as a main.
6 tomatoes, chopped
1 cucumber, chopped into large pieces
1 red capsicum, chopped
1 bunch of green onions, chopped and whites removed
1 bunch fresh coriander, chopped
1 avocado, halved
Juice of 1 lemon or 1 lime
2 tbsp olive oil
1 tsp garlic infused olive oil
2 tsp apple cider vinegar
Salt and pepper to taste
- Add all ingredients to a blender and purée.
- Ladle into serving bowls and enjoy!
*Optional: Top with diced tomato, cucumber, green onions, coriander, pepitas, a drizzle of olive oil, etc.
