1 bunch of choy sum, washed and ends trimmed
1/3 brick firm tofu, cubed
1 knob of ginger, diced small
1/4 – 1/2 cup chopped broccoli
1 tsp garlic infused olive oil
Salt and pepper to taste
To serve: 1/2 cup cooked white rice and 1/4 avocado.
- Heat pan over medium high heat, add oil.
- Add tofu and ginger and cook until browned – about 10 minutes.
- Add broccoli and cook another minute or so until vibrant.
- Add greens, a tablespoon of water and cover to wilt.
- Serve with rice and avocado.
