Choy Sum and Ginger Tofu

1 bunch of choy sum, washed and ends trimmed

1/3 brick firm tofu, cubed

1 knob of ginger, diced small

1/4 – 1/2 cup chopped broccoli

1 tsp garlic infused olive oil

Salt and pepper to taste

To serve: 1/2 cup cooked white rice and 1/4 avocado.

  1. Heat pan over medium high heat, add oil.
  2. Add tofu and ginger and cook until browned – about 10 minutes.
  3. Add broccoli and cook another minute or so until vibrant.
  4. Add greens, a tablespoon of water and cover to wilt.
  5. Serve with rice and avocado.
