I’ve been making this recipe from Dr Mark Hyman for many years now but stopped because it wasn’t SIBO friendly. The original recipe used spinach as the base and we are only allowed like 12 leaves at a time so this became impossible. I recently reinvented it in a way that’s nutritious, tasty and gut approved.
2-3 cups greens ( I used kale and rocket in equal parts)
1 cup boiling water
1 small avocado
Juice of 1 lemon
1 handful of coriander
1 green onion
1 tsp salt (less if preferred)
Black pepper to taste
- Add all ingredients to blender and blend until creamy.
*Optional: I like a bit of crunch and texture with my soup so I topped mine with diced red capsicum and pepitas.
