Salad Ingredients:
4 carrots, shredded
1 bunch coriander, chopped
3 green onions, chopped and whites removed
3 tbsp sesame seeds
3 tbsp hemp seeds
1 medium avocado, diced
Dressing Ingredients:
1 tbsp olive oil
1 tbsp sesame oil
1 knob of ginger, diced small
1 tbsp ground coriander
Juice of 2 limes
2 tbsp apple cider vinegar
- Make the salad dressing, combining all ingredients. Set aside.
- Shred carrots – I used a food processor.
- In a large bowl, combine carrots, green onions, coriander, sesame seeds, hemp seeds and mix thoroughly.
- Dice avocado and add to salad, mix gently to combine.
