Strawberry Rhubarb Chia Jam

400g (around 2 cups) frozen or fresh strawberries

200g (around 1 cup) rhubarb, cut into slices

1 knob of ginger, diced small

2 tbsp chia seeds

A little water

*Optional: 1 – 2 tbsp maple syrup to sweeten.

  1. Add all ingredients to a pan and bring to a boil with just enough water in the pan so that it doesn’t stick.
  2. Once hot turn down low, cover and simmer for 15-20 minutes until thickened.
  3. Turn off heat and smash any whole berries if you prefer it mashed.
  4.  Add maple syrup if using and stir through.
