1 head of broccoli, chopped into smaller pieces
4 carrots, shredded
1/2 bunch green onions, chopped and whites removed
2 tsps garlic infused olive oil
1/2 tsp ground ginger
1 tsp apple cider vinegar
1/2 brick firm tofu, cubed
A handful of chopped coriander
2 tbsp tamari
1 tbsp sesame oil
2 cups cooked rice
Salt and pepper to taste
- Heat a large pan or wok, add garlic infused olive oil.
- Once hot, add green onion, carrots, broccoli and tofu. Heat until vibrant.
- Add tamari, apple cider vinegar, salt, pepper and ginger – mix through.
- Add cooked rice, coriander and sesame oil, mix through.
- Serve immediately.
