Carrot and Broccoli Fried Rice


1 head of broccoli, chopped into smaller pieces

4 carrots, shredded

1/2 bunch green onions, chopped and whites removed

2 tsps garlic infused olive oil

1/2 tsp ground ginger

1 tsp apple cider vinegar

1/2 brick firm tofu, cubed

A handful of chopped coriander

2 tbsp tamari

1 tbsp sesame oil

2 cups cooked rice

Salt and pepper to taste

  1. Heat a large pan or wok, add garlic infused olive oil.
  2. Once hot, add green onion, carrots, broccoli and tofu. Heat until vibrant.
  3. Add tamari, apple cider vinegar, salt, pepper and ginger – mix through.
  4. Add cooked rice, coriander and sesame oil, mix through.
  5. Serve immediately.
